Te Talua

Te talua is actually teh telur (tea with egg) in bahasa Minang. You can find this drink in every restaurant or food stall with Minang's menu in Riau and West Sumatra.

Te talua is made from very hot tea, egg yolk, and sugar or sweetened milk. Sometimes they offer you to add ginger.

The key to get the best te talua is the way they beat the egg. It doesn't matter whether they use hand beater or hand mixer, the result is the same. In Bukittinggi, they use a bunch of thin bamboo slats to beat the egg. All process is done in the serving glass. Don't try it if you can't handle the heat of the tea. If you don't beat it fast enough, the egg yolk will be cooked so it can't give you any foam. 

How to drink te talua? Stir it slowly so all ingredient mixes well. Put in citrus or lemon and enjoy the warm. Hmmm.....

I think the best te talau you can get is from Minang's restaurant. Not necessarily try to make it by yourself.
